In The Kitchen With Elloise

Today in hospitality everyone was meant to make chewy chocolate slice.............unfortunately though, we ran out of time and only two groups could go ahead and cook. This was very disappointing, but I feel we learnt the hard way to manage our time more effectively.

The recipe we were going to follow, would have been as follows;


Ingredients:

125 gm melted butter
1 cup (220gm) brown sugar
1 egg
1 tsp vanilla
½ cup (75gm) plain flour
¼ cup (35 gm) SR flour
2 tbl cocoa powder
½ cup (40gm) desiccated coconut
1 tbl shredded coconut

Icing:

1 cup (160gm) icing mixture
2 tbl cocoa
10 gm soft butter
1 tbl hot water (if needed)

Method:

    The Mixture

    1. Preheat oven to 180C. Place glad bake in bottom of a slice tin.
    2. Combine butter, sugar, egg and vanilla in a medium bowl.
    3. Stir in flours, cocoa and desiccated coconut.
    4. Spread mixture over the base of the pan.
    5. Bake 25 minutes or when firm to touch.
    6. Spread hot slice with chocolate icing and sprinkle with shredded coconut. When cool cut into 15 squares and then into triangles.

To make icing: Sift icing sugar and cocoa in a small bowl, add butter and beat. Add small amounts of water until the mixture is the correct consistency to spread.

After being unable to cook this dish at school, I tried it at home - following the EXACT same recipe. And.........It turned out Fantastically! The only problem I had was not letting the Chocolate Slice cool down for long enough, so on some of them the icing was melted. However, this is something that can easily be prevented in the future.
